Hurda / Serrik

#1 I noticed on the board they called the Easter Cheese - ( Hurda??) we call it Serrik

This makes 2 balls of cheese- a doz eggs/ a qt & 1/2 of milk/ tsp vanilla/ 1 tblsp sugar/ a pinch of salt/ beat together well/ cook slowly over LOW heat stirring constantly / when it looks like yellow cottage cheese & liguid separates I pour it into 2 CLEAN NEW knee High (stockings) tie it so it looks like a BALL hang it from the kitchen cabinet & let it drip. Refrigerate over night/ take the stocking off & slice. (Don't laugh at the stocking thing it works better than cheese cloth no strings!!)

#2 I make Hrudka, Easter Cheese also, and have them hanging from my cabinets, I use cheese cloth, but I might try the "new" knee hi's, My recipe is 2 doz eggs, 5 cups milk, 1t vanilla, and 1/2 c. of sugar Beat eggs well, add rest of ingredients, and cook in double boiler until curdled..I also beat with beaters while on the stove, this makes it even lighter, Someone mentioned using a microwave and I might try that this year!! I get 2 good size balls.. Do you make paska, my is sweet dough mix. Do you get basket blessed??
